Tayside Pesto

  • 12 basil leaves

  • 60ml The Gael Gin

  • 5ml fresh lemon juice

  • 10ml simple syrup

  • 20ml Dry vermouth

 Muddle basil and gin, add all other ingredients and shake with ice. Double strain over cubed ice. Garnish with a basil sprig.
