The Calluna

  • 50ml The Gael gin

  • 10ml Elderflower Liqueur

  • 20ml fresh lemon juice

  • 15ml Heather honey syrup

  • 5 drops of Lejay cassis bitters

  • 1 fresh egg white

 Shake first 5 ingredients with ice. Remove ice, add egg white and shake hard. Strain into chilled coupe glass, garnish with lemon twist or heather sprig.
